delicious tomato soup

(and I don’t even usually like tomato soup)

2 medium onions, diced
3 cloves garlic, minced
olive oil
28 oz. can whole tomatoes
14 oz. can fire roasted diced tomatoes
8 oz. can tomato sauce
6 oz. can tomato paste
4 cups chicken stock
2 tsp. salt
1/2 tsp. pepper
2 cups milk

Saute onion in olive oil until almost translucent. Add garlic and continue to cook for a few minutes. Add tomatoes, sauce, paste, and stock. Bring to a boil, cover and reduce heat to simmer for 30 minutes. Puree in blender until desired consistency. Add milk and seasonings and simmer 5-10 more minutes.

    I served this tonight with open-faced grilled cheese on french bread and a vegetable tray. It was perfect for the snowy evening–thanks for the great recipe!
